Carrot and coriander soup

As the weather turns colder there is nothing better than a homemade delicious warming soup. This soup is not only tasty but super healthy too; it’s packed with beta carotene a powerful antioxidant.

This is great as a light lunch, supper or children’s tea served with warm crusty bread.

Ingredients

1kg Carrots – peeled & sliced

2 onions chopped

2 tsp ground coriander

1.5 litre vegetable stock

Bunch fresh coriander chopped

Salt and Pepper

 

Method

Gently fry the chopped onions in a little oil for a couple minutes before adding the sliced carrots and ground coriander, season and cook for another couple of minutes before adding the stock.

Bring to the boil and simmer for 20-30 minutes until the carrots are tender.

Leave to cool slightly and blitz with a hand blender.

Reheat to serve and add a generous sprinkle of fresh coriander – simple and delicious!
