Chocolate cookies

These cookies are super easy and only use 4 store cupboard ingredients so can be made whenever a quick tasty treat is needed! They are perfect for summer picnics or easy enough to be made with the children in the holidays. The key is to use a good quality cocoa powder.

Chocolate Cookies

130g softened butter
85g granulated sugar
115g plain flour
35g cocoa powder

Method

Whisk the butter and sugar together until pale.

Sift in the flour and the cocoa powder and mix with a wooden spoon until combined.

Bring the mixture together into a dough and shape into a ball and wrap in cling film.

Place the dough in the fridge for approx an hour or until it’s firmed up slightly.

Pull the mixture into small balls, place on a lined baking tray and press down flat with your fingers or palm.

Cook on the middle shelf for 15-18 mins at 170c.

Leave to cool slightly on the tray and transfer to a wire cooling rack.

This should make approx 18/20 biscuits, they should be crunchy on the outside and chewy in the middle.

A perfect treat for all those hungry children!
