Courgette spaghetti with coriander and pecan pesto

This is a simple, quick and healthy supper.

Courgette spaghetti makes a healthy low carb alternative to pasta and the pecan nut is a powerhouse of vitamins, minerals and antioxidants.


Ingredients  – Serves 2

100g Pecans

100g Coriander

Juice of 1 lime

Clove of garlic crushed

Salt & Pepper

2 Courgettes – spiralled into spaghetti

75g Feta (optional)

 

Method

Place the pecans in a food processor and blitz until finely ground. Add the coriander, crushed garlic, lime juice, season well with salt and pepper and blitz again.

Heat 1 tablespoon of olive oil in a wok or large frying pan and cook the spaghetti for 2-3 minutes, add the pesto, heat for another minute and serve straight away. You can crumble the feta over the top, if using.
