Rhubarb gin

Gorgeous Rhubarb is in season at the moment so after you’ve made the standard crumble what better use than to have a go at your own Rhubarb gin!

Rhubarb Gin
750g Rhubarb, chopped
350g Sugar
Juice of half a lemon
1 litre gin
Large kilner type jar with seal.

Cut the rhubarb into 1 inch pieces, the pinker the rhubarb the better!
Place all the ingredients in the jar and give it a good shake, leave for 1-3 months, shaking twice a week.
Taste after a month and add more sugar if you like a sweeter mix. The sugar will dissolve and the mix will become pinker and tastier by the day!
Once ready strain overnight through a coffee filter or muslin cloth.
Bottle and drink! Gorgeous with tonic and a slice of orange or delicious in prosecco!
