Salted caramel spooky spider cupcakes

Halloween is such a fun time for adults and children alike, make everyone smile with these novelty buns. You can be creative and make any spooky toppings you feel like, the salted caramel gives the buns a grown up edge.

Salted Caramel Spooky Spider Cupcakes

The Bun

100g butter/margarine

100g caster sugar

2 eggs

100g self raising flour

Salted Caramel Icing

125g caster sugar

80ml double cream

½ tsp salt

1 tsp vanilla extract

160g salted butter, softened

200g icing sugar

The Spider Topping

Large chocolate button

Candy eyes

Icing for decorating

 

Method

The Buns

Beat the margarine and sugar together until it turns pale, light and fluffy.

Beat in the eggs one at a time adding a spoonful of flour with each.

Fold in the rest of the flour.

Fill a bun tray with bun cases and half fill the cases with the mixture.

Cook in a pre heated over at 180c for approx. 20 minutes until golden brown and springy to the touch.

Turn out onto a wire rack to cool.

While the buns are cooling make the salted caramel icing.

Salted Caramel Icing

In a sauce pan over a gentle heat dissolve the caster sugar in 4 tablespoon’s of water, increase the heat and cook the caramel until golden brown and slightly thickened, which should take 2 to 3 mins.

Remove the pan from the heat and stir in the cream, add the salt and vanilla and leave to cool.

Cream the softened butter with the icing sugar for 5 minutes, then beat in the caramel.

Spread the icing over the buns and decorate with the toppings to create your spooky spider!
